Forgive my ignorance, but what exactly does one do when maintaining a server ?? Is it clearing out memory or something ??

The term can cover various things either hardware or software related such as installing more memory or more disk space, or adding new software or facilities or even upgrading security features.

Just think of it like doing something on a very powerful PC.  Servers are online 24/7, but occasionally they have to be shut-down so that something can be upgraded.
