  Your problem is odd, as although I  don't even have a smart phone to use WiFi calling, I do in fact use a VOIP  phone line running on a TP Link 4G router, or a EE mini hub for a duplicate  VOIP line which works over my normal broadband. As it happened, today, we lost our Sky broadband for a short time, and the standby 4G line was very useful. Sorry I cant offer any help on you particular problem, but it seems very odd that your WiFi calling does not work. But could you not try port forwarding on the router for the mobiles, or maybe temporarily setting up a DMZ to a mobile just to see if it is a port issue???

Sounds like you might just need to delve deeper into settings on the router and the Roku, as you might be a digit 1 out! As for your wife's phone, I have EE phone and Plusnet BB and have never needed to set up the Voip it just happens, phone is a Sam A54 so nothing special.
Regards.

Hi it was the EE smart hub but it's pretty restricted in what settings you can change :(  , it's now boxed up ready for returning so stuck on the old adsl again for now  :no:

Are you changing from EE as well. As I thought this was a modem as well?

Yes I'm cancelling the EE , so still with BT ( I didn't cancel BT until I was sure the EE connection was going to work )

  I  have not tried the EE smart hub, but the mini hub was a bit of a pain to use. To keep it simple to get the voip to work you needed to keep the smart hub awake, or it would not allow my voip ATA to log in to my voip provider. So I simply logged the computer into it first, then turned on the ATA and the voip worked. I did notice with the arrangement that there was quite a delay before dial tone was returned when calling, I assumed due to having to wake the modem up again.   Maybe the EE smart hub works in the same way?
  My 4G TP LINK router works like a normal internet connection with no problems.

Thanks my next plan is to buy my own 4g router and try different data sims . ( the TP link seems to get good reviews from what I've seen )

@noddy

https://www.tp-link.com/us/service-provider/wifi-router/nx510v/

https://www.clove.co.uk/products/tp-link-5g-ax3000-wi-fi-6-telephony-router

I'm hearing good reviews on this, plus it has a phone port for plugging in a analogue phone or dect cordless to use the minutes if you have a Smarty Sim or similar.

Does the phone port actually work though?  I had a Huawei unit and when I put a Three SIM in it the phone port just beeped at me.  Although that probably pre-dated VoLTE which might have explained it.

Personally I have the GL.iNet GL-X3000/ Spitz AX, its expensive but very flexible as it runs full OpenWRT under the hood.  Shame it doesn't have a phone port at the price though.

     I am using a TP Link AC1200, 4G router, with a SMARTY SIM,   At 20 pound per month for unlimited data only. In my area the speed does slow, mainly in the evenings, but is more than enough to run the VOIP phone plus use the internet for most of my needs, as a back up connection.
    Finally managed to post this, without the pound sign, after checking the site info !

Mine does. It may make a difference if it's the same carrier, mine is Three for the Internet, the phone is on Lebara (Vodafone)
