Hi

@weaver - edit the email account, click advanced and it should look similar to this picture

You can see you can select delete or archive and if you click archive, you can preset archive to use

You may have set this to archive but an iOS update may have defaulted the setting back perhaps

Fully removing the email account deletes the archive and adding it back in defaults deletion to trash bin - not archive
