One recipe, this is quick and easy, my type of baking.
This is a good recipe if you have some over ripe bananas, or you can pick some up cheap 'cos they are considered too ripe. Don't worry that you end up with a bowl of something looking off colour and gloopy thats how its supposed to be. The hardest and messiest bit is getting that into the muffin cases and only the muffin cases. The recipe says raisins but I prefer sultanas and always add a bit extra.
Ingredients:
250g plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
3 large ripe bananas
1 egg
70g dark brown sugar
50ml vegetable oil (I use Sunflower)
30g raisins
Pre heat oven to 375f/190C/Gas5
I recommend as large a bowl as possible for this.
With an electric hand mixer beat the peeled bananas until mashed.
Beat in the egg, sugar and oil.
Add the dry ingredients a little at a time and beat on low speed, mix until just blended, stir in the raisins.
Fill muffin cups two-thirds full. Don't over fill they will rise. (recommend you use cases)
Bake for 20-25 minutes.
Recipe says makes 10 but I usually get 8.
Best eaten slightly warm and on day of baking and sod the diet.
