Hello

'My' area is due to get Virgin Media, though Openreach are adding their FTTP here, too.

My understanding is that you get Virgin Media Hub with the FTTP install, but has anyone used Fritzbox 5530 instead (either on Virgin Media's or Openreach's connection)?

I don't think this Fritzbox is officially available in the UK yet, but from a few videos that I've watched, it looks like AVM are considering the UK market, too.

Are there any other alternatives to VM's/Openreach's own modems other than Fritzbox 5530?

Probably not, at least with Openreach you have to pretend to be their own ONT and I can't imagine the Fritzbox letting you do that, they seem quite locked-down intended for plug-and-play use.

No idea how Virgin will work, buy given on their cable network you have to use their router (though they do support bridge mode) I suspect they too will lock to their own hardware.

So I don't think you'd be able to use the GPON functionality in the Fritzbox but should work with the Openreach ONT and hopefully whatever Virgin are using.
