I am very please to read that this is a extension that applies to existing kit, so my FB2700 gets a longer warranty now. (My FB2500 is presumably out of warranty because it is too old.)

Unless there's another announcement somewhere you haven't linked I think you may be reading that wrong.
We are happy to announce we are extending the manufacturer's warranty on all FB2900s. The warranty will now be 5 years from date of purchase. This change is has been applied to all FB2900s and FB6000s so even if you bought your FB2900/FB6000 with a shorter warranty, your warranty date has been extended free of charge.
I see no mention of other models, only the FB2900/FB6000.

What sort of speed can you send data from lan to wan and vice versa? Would any of the Firebrick devices support speeds of 500Mbps?

I would expect the FB6000 devices to be capable of exceeding that throughput.

I am considering having a pfSense firewall. I am wondering what hardware to buy if I want something that will pass data at 600Mbps+ and does not cost to much to buy or run. One option might be a PC Engines APU2c4.

I thought the FB2900 series was already capable of exceeding that? According to their website (https://www.firebrick.co.uk/) it says:
Capable of routing approx 750Mbits/sec - ideal for leased lines, multiple bonded DSL circuits or similar. Of interest in a commercial setting, the unit also has SIP PBX, IPSec VPN and traffic shaping functionality; an ideal all rounder for your office.

https://www.firebrick.co.uk/fb2900/key-features/ says it is "up to 750Mpbs" so it might only be 128k. Given RevK’s understandable scorn (https://www.revk.uk/2013/08/up-to.html) concerning the use of ‘up to’ (https://www.revk.uk/2011/07/up-to.html) then this is an oopsie.

I'd quite agree. I imagine the amount and type of rules could have a large impact on the throughput. I actually did think about getting a Firebrick and VDSL line bonding from AAISP, but I don't really fancy a hole burning in my pocket as it is pretty empty in there as it is (and G.fast is on the horizon so it pretty much makes it bonding two lines redundant, unless it is in a configuration as a fallback).
