Sometimes when I'm outside my 802.11n WLAN droops down to speed of just a few Mbps, quite reasonably, and keeps on struggling along pretty well.
My question: if I go 802.11ac, should I expect to get faster speeds in the same location, with the same crap weak signal environment?

Probably not as 5Ghz tends to have a shorter range, and is affected more by thick stone walls.
You could get an external antenna installed, or perhaps have an access point in the loft which might allow a better signal distribution. You may be able to improve things by careful choice of hardware, some has a higher power rating than others, sometimes you need to tell the hardware your in a different country so it doesn't restrict the power to the UK regs ;)

802.11ac will be a lot worse from my own experiences. I would say that if you want to get through walls and have good range a good wireless n is best. Choosing a good one is hard, I have stuck with a Dlink DIR-655 which is old but seems to be as good you get.
