The standard BT Infinity install has the BT Openreach modem and the BT Home Hub 3 connected to each other by what looks like an Ethernet cable. Is it just a common or garden cable and, if yes, can I substitute a longer (say 15m) cat5e cable of my own and hence separate them by a greater distance?

Yes, is the answer to both questions. ;)
As it is just an Ethernet link, you can use either a CAT5e or CAT6 cable up to the maximum length the Ethernet standard allows.

.... which I believe is 100 m.
Although I've not seen it done you could probably route the ethernet through Home plugs if you had to.
Kind regards,
Walter

I believe that there is a mention of someone trying that on the Thinkbroadband site . . . not very successfully. :(
(Sorry, I can't find the link. :-[ )

Thank you all for the quick responses. The Homeplug solution isn't too good unless they are Homeplug 500+ or higher. The common or garden Turbo 85s max out at around 7 to 10 Meg throughput - another example of marketing-speak?
I am going to run cat5e through the ceiling space (we are in a bungalow) and down to faceplates on the wall. Then normal network cables to the devices. It makes sense to leave the modem close to the master socket.

That looks purrfect, to me. ;D
