When I attempt to convert a pdf opened in Adobe Reader X to text by any variant of copy/ paste, the result is a gibberish of various signs, and not the expected text.
Can anyone advise solution, please?

This probably isn't helpful, but I just tried it on Adobe Reader 9 on Linux, and it worked fine. I just dragged the mouse over a section and hit Ctrl+C.

Unless you are forced to use Adobe I would dump it for something lighter and more friendly.
I use PDF Viewer http://www.tracker-software.com/product/pdf-xchange-viewer and find it very much better than the Adobe bloatware that so often carries major vulnerabilities.

Some PDFs are subject to copyright and cannot be copied succesfully.
